Tear peas are one of the most highly valued products of the spring season, known for their natural sweetness, extremely tender texture and an almost imperceptible skin. They are not defined by their size, but by the variety and the timing of harvest, carried out very early, before the peas have developed starch. Not all small peas meet these characteristics.
